By request, I have another recipe to share. This is by no means a traditional dish. My mom used to make this for our rather large family growing up. It is the dish I attempted in order to make "china" food for Mandy. Mandy and Mia liked it very much, and it taste better than it appears.
Chicken Chow Mein
1-3 Chicken Breasts(bone in), boiled,deboned, and cut into bite size chunks...season the chunks with a little salt,pepper, and garlic salt or powder
Using a family size (at least 12 in) skillet or a large dutch oven, heat 3 cups of chicken broth.
Add 2 lg. cans of chinese veggies ( my mom always used La Choy brand).
It would probably work just as well to add frozen stir fry veggies or make your own stir fry ahead. The canned veggies have a mix including bean sprouts, bamboo shoots, and water chestnuts.
Add 1 can of bamboo shoots ( in addition to)
Add 1 can of water chestnuts ( in addition to)
Add your chunks of chicken and 2 T. of Soy Sauce. Stir and Heat through.
In a separate bowl, dissolve 2 chicken bouillon cubes in hot water. Add about 2 heaping tablespoons of corn starch and dissolve in bouillon. Pour into chicken/veggie mix and stir until slightly thickend. Season with additional salt,pepper, and garlic salt/powder as needed. We serve this on top of steamed rice... fried rice or noodles would probably work as well. Top with crunchy chinese noodles.
** Cautions: 1) Be careful of the amount of salt you use as the bouillon and soy sauce will add some saltiness to your dish, and 2) I used an off brand of bamboo shoots, and they were very tough and tasted like metal. I am not sure what brand it was that I used. I think I will use the La Choy next time.**
